Tea Loaf



8oz Self-Raising Flour

4oz Demerara Sugar 8oz Mixed Fruit (Usually 4oz Sultanas, 4oz Raisins)

7 ½oz Cold Tea

1 large egg


Make tea(stronger the tea, darker the cake.) 3 tea bags about normal.

Let tea get fully cold, and pour required amount into a large mixing bowl. Keep a little aside for consistency mixing later. Add the fruit and leave to soak for 8 hours (overnight).

Sift and add flour, sugar and egg (and extra cold tea if necessary) and mix until soft dropping consistency.

Use loaf tin (8”). Butter lightly and line with greaseproof paper. Spoon mixture in and let settle.

Bake at 350ºF (Gas Mark 4, 175ºC) for approximately 1 hour. (Check at 50mins and at further 10min intervals if necessary)


if using a fan oven, reduce the temp by ~10ºC.
